Chicken Enchiladas

Ingredients

  • 2 cup cooked chicken, shredded
  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (4 oz) can diced green chilies
  • 1/2 cup chopped green onions
  • 1 tsp cumin
  • Salt and pepper to taste
  • 10 flour tortillas
  • 1 (10 oz) can enchilada sauce
  • Extra cheese for topping

Instructions

  1. 1 Preheat oven to 350°F (175°C).
  2. 2 In a bowl, mix together the shredded chicken, cream cheese, sour cream, cheddar cheese, Monterey Jack cheese, diced green chilies, chopped green onions, cumin, salt, and pepper.
  3. 3 Spoon the mixture evenly onto the flour tortillas. Roll them up and place seam-side down in a 9x13 inch baking dish.
  4. 4 Pour the enchilada sauce over the rolled tortillas and sprinkle with extra cheese.
  5. 5 Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. 6 Serve hot, garnished with chopped cilantro or additional green onions if desired.
