Enchiladas

Ingredients

  • Oil
  • 1-1/2 pounds lean ground beef
  • 1 onion, finely minced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 2 cup water
  • 2 tbsp chili powder
  • 3 tbsp oil
  • 2 tbsp flour
  • 1 (16 ounce) can tomato sauce
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 12 corn tortillas
  • Oil
  • 1 pound Cheddar cheese, grated

Instructions

  1. 1 Place a very little bit of oil in a skillet and brown beef, onion and garlic; add salt.
  2. 2 Combine water and chili powder and set aside.
  3. 3 Heat 3 tbsp oil and add flour, stirring until browned.
  4. 4 Slowly add chili powder mixture, stirring until thickened.
  5. 5 Add tomato sauce, salt, pepper and cumin and simmer 5 minutes.
  6. 6 Soften tortillas by dipping in a little hot oil; drain.
  7. 7 Place about 2 tbsp of meat mixture in each tortilla, top with cheese and roll.
  8. 8 Place seam side down in a baking dish, cover with sauce and any remaining meat mixture and cheese.
  9. 9 Bake at 350 degrees for 35 minutes or until hot and bubbly.
