Street Corn Chicken Bowls

Ingredients

  • 2-3 large chicken breasts
  • 1/2 cup chicken broth
  • 1 package taco seasoning
  • juice of 1 lime
  • 2 cans of corn
  • 1/4 cup chopped yellow onion
  • cilantro
  • juice of 2 limes
  • 1 cup of mayo (or blend cottage cheese)
  • chili powder
  • salt
  • pepper
  • paprika
  • garlic powder
  • tajin seasoning

Instructions

  1. 1 In crockpot: place chicken breasts, chicken broth, taco seasoning, and juice of 1 lime.
  2. 2 Cook on low for 5 hours or high for 2.5 hours or until chicken reaches 165°F.
  3. 3 Shred chicken.
  4. 4 For corn mix: combine corn, chopped yellow onion, cilantro, juice of 2 limes, and 1 cup mayo (or blended cottage cheese).
  5. 5 Season corn mix to taste with chili powder, salt, pepper, paprika, garlic powder and tajin seasoning.
  6. 6 Serve shredded chicken and corn mix over cilantro lime rice.
