MEXICAN CASSEROLE

Ingredients

  • 1 lb. hamburger
  • Salt and Pepper
  • 1 tsp. chili powder
  • ½ lb. cheese, grated
  • 1 small onion, chopped
  • 1 can chopped green chilies
  • 1 can corn, drained
  • 1 c. yellow corn meal
  • 2 eggs, beaten
  • ½ tsp. soda
  • ¾ tsp. salt
  • 1 c. milk
  • 1 can cream style corn
  • ¼ c. oil

Instructions

  1. 1 Brown hamburger with salt, pepper, chili powder, and onion; drain grease.
  2. 2 Add green chilies and corn.
  3. 3 In a mixing bowl, combine corn meal, eggs, soda, salt, milk, cream style corn, and oil; mix well.
  4. 4 Grease a 9x13 inch baking dish. Line the bottom with half the corn meal mixture, then add all the meat mixture, then the grated cheese.
  5. 5 Spoon on remaining corn meal mixture.
  6. 6 Bake at 350° for 40 to 50 minutes.
