Lori’s Grilled Quesadillas

Ingredients

  • Flour tortilla
  • butter (regular or garlic seasoned) to butter one side
  • Sharp cheddar cheese (good handful)
  • Pepper jack cheese (small handful, optional)
  • Cooked meat of choice (rotisserie chicken, grilled fajita meat, shredded beef, seasoned ground beef)
  • El Sol or favorite salsa (to sprinkle)
  • salt to taste
  • pepper to taste

Instructions

  1. 1 Butter one side of a flour tortilla with regular or garlic seasoned butter.
  2. 2 Place the tortilla buttered-side down on a baking sheet.
  3. 3 On half of the tortilla add a good handful of sharp cheddar cheese.
  4. 4 Add your cooked meat on top of the cheddar, evenly spread but not too much.
  5. 5 Top the meat with a small handful of pepper jack or additional cheddar.
  6. 6 Sprinkle salsa over the cheese layer and add salt & pepper to taste.
  7. 7 Fold the tortilla in half to enclose the filling.
  8. 8 Cook in the oven at 400°F, turning to cook each side until light brown & crispy, or slide onto a grill and cook over medium flame until both sides are lightly browned and crispy.

Notes

Uses any cooked meat (rotisserie chicken recommended). Buttered side should face out to crisp. Oven: 400°F; Grill: medium flame.
