Creamy Sausage Gnocchi Soup

Ingredients

  • 1 tbsp olive oil
  • 1 pound italian sausage
  • 1 medium onion, diced
  • 3 cloves minced garlic
  • 1 tsp italian seasoning
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes
  • 4 cups chicken broth
  • 1 cup room temp heavy cream
  • 2 cups chopped kale or spinach
  • 1/4 cup parmesan cheese
  • salt to taste
  • 1 (16 oz) potato gnocchi pkg

Instructions

  1. 1 Warm olive oil in stockpot and cook sausage.
  2. 2 Add onion halfway through cooking the sausage.
  3. 3 Then add garlic and seasonings.
  4. 4 Pour in broth and bring to gentle boil, then simmer.
  5. 5 Stir in cream.
  6. 6 Add gnocchi and cook to the package instructions.
  7. 7 Stir in greens and cheese.
  8. 8 Season to taste and serve.
