Spanish Rice With Avocado

Ingredients

  • 1/2 stick margarine
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 cup uncooked rice
  • 1/2 tsp salt
  • 1/4 tsp crushed oregano
  • 1/2 tsp cumin
  • 1 (14 ounce) can chicken broth
  • 1 (4 ounce) can chopped green chilies
  • 2/3 cup water
  • 1 avocado

Instructions

  1. 1 Melt margarine in a medium size saucepan and add onion and garlic; cook until tender.
  2. 2 Add rice; cook, stirring constantly for about 3 minutes.
  3. 3 Add salt, oregano, cumin, chicken broth, green chilies and water.
  4. 4 Bring to a boil; cover, reduce heat and simmer about 25 to 30 minutes or until rice is tender and all liquid is absorbed.
  5. 5 Peel and pit avocado and dice.
  6. 6 Fluff up rice with fork and add avocado and toss gently.
  7. 7 Turn off heat and let stand 5 minutes before serving.
